Well, looks like I'll be moving to Austin in a few more weeks.  ^_^;
Just got the offer letter from PrintGlobe, an online printing superstore, to start tentatively July 1st as their account manager (NOT collections for once!)  Hopefully I'll be able to finish the house here and move over to an safe apartment there by end of June.  It's like in the southeast corner technology park of ben white and I-35.

Well... apparently somebody decided to let themselves into my house (in garland) and looking for stuffs to steal.  Unfortunately for them I've already donated mostly anything that's of any value.  Unfortunately for me they made a big mess pulling out all the drawers/boxes/trash bags plus stealing my LCD & computer.  Sorry Hoa, the keyboard you gave me was also taken.  They also took the key to my security chest..... thank goodness they didn't realize what it was for.  Anyways... I'm pretty pissed... but.... well...nothing I can do about it.

Yum!

In the past couple of weeks I've been working avocado into my food.  I used to dislike it...thought the flavor was kinda odd...  but thru the slow introduction of (highly sweetened) avocado milk, and veggie sushi rolls w/ avocado, avocado eggrolls...  I now bravely and happily eat it in my (almost) daily meal.  Below is a few of my recent overly-used recipes =D

Avocado-veggie Rolls
    Ingredients:  Sushi rice w/vinegar/mirin to taste, pickled daikon, radish sprouts, japanese cucumber (not the fat watery ones here), avocado, and anything other veggie you like, plus roasted nori.
    Just slice up everything.  Thinly spread the sushi rice over a sheet (or half) of nori, put all the veggie slice on it, then roll it up. Slice and serve with pickled ginger.  Wasabi and soy-sauce option.  (personally I hate wasabi). (Adding too much radish sprouts will make the roll taste bitter, use sparingly...)

Avocado Salad
    Ingredients: Avocado slices, alfalfa sprouts, cherry/grape tomato, baby spinach,  your choice of lettuce (I like to use the herb salad or romaine lettuce mixes), feta cheese, fresh button mushrooms, and your choice of salad dressing (I like to use raspberry-walnut vinaigrette, but Jerel likes ranch better).
    Grab a handful of all the above and toss with salad dressing =D 
  
     Variation:  Put the above salad, minus the feta cheese and mushroom, slice up the tomato, go light on the dressing, and smack them between 2 sturdy slices of toast/bread will make a delicious and healthy veggie sandwich!

Grilled cheese & avocado sandwich
     Ingredients:  Your choice of cheese slices (I like using pepper-jack and chipotle cheese), 1/3 of a ripe avocado thinly sliced, fat slice of tomato, handful of baby spinach, and alfalfa sprouts optional. 
     Heat up a grill or pan to medium heat-settings (about 300 degrees).  toast 2 pieces of your choice of bread (I like multi grain wheat bread...) on it, flip them over once when one side's lightly browned.  put a slice of cheese on both pieces of bread.  once it starts melting, layer the spinach & tomato on one piece, the avocado & optional alfalfa on the other piece.  give it about a min, then flip one side onto the other, bread on the exterior of course.  Put some weight down on one side to flatten it....  serve hot.  
     (You can butter the grill/pan, but I skip that step and it still tastes good )


These are quick meals and I get full without the bad stuffs that usually accompany my ramen/fast-food lunches ^_^  Plus Jerel likes them too!!
